While in Granada a few years back we had grilled sandwiches of jamón serrano and tomate rallado (grated tomatoes). They're fantastic--and easy to make.
Heat up a heavy griddle or skillet. Smear some tomate rallado on a slice of good bread (the ones we had in Granada were made of pan de barra, Spanish style baguette sliced long ways, like a sub).
Add a slice of jamón serrano (just a slice or two is enough: Spanish-style ham is full flavored).
Wipe the skillet down with olive oil and toast the sandwich on both sides.
Cut in half and serve. This makes a great tapa.
